Authentic South-east asian cuisine
Rumah is the brainchild of owners Ian Smith and Ian Lawless. They’ve worked with creative interior, food and drink experts to bring the chic designs, adventurous tastes and stunning aromas from Bali to this new venture. Rumah translates to home in Indonesian, and designer Chris Naughton from Sheila Bird has created a space that is welcoming and homely, together with the vibrant colours and textures of Indonesia. With a contemporary interior, spacious dining sun terrace and outdoor courtyard. Rumah offers different zones and spaces for adults, families, children – and dogs!
“Rumah has taken us years to develop. I fell in love with the beautiful island of Bali years ago. It’s so enchanting; with restaurants full of fresh and tasty food served with warmth and an unmatched hospitality. Our goal is to recreate a little bit of Bali here in Birkdale and we can’t wait to welcome you to have a quiet daytime coffee, a lunch with friends or an evening cocktail. Cheers – or as they say in Bali – tepuk tangan!”
A tribute to Troy’s Mother and Grandmother. A dish prepared with lots of care and attention. A meal which is a staple diet in the Philippines. With this dish you can expect sweet, tart flavours due to the balance of soy and vinegar alongside the captivating tenderness of the slow braised belly pork.
The original Daiquiri was created by Jennings Cox in 1898 in the beach town of daquiri when the American engineers ration of gin ran out and was forced to drink ‘aguardiente’ or ‘tooth water’. The addition of a fruit native to south east Asia, Lime for scurvy and sugar for taste creates this simplistic concoction.
Our head chef Troy Amador grew up on the Indonesian border and has worked extensively in the country. He developed Rumah’s lunch and dinner menus during a special two-month research trip. He said: “As I grew up in a developing country my diet was amazing. It was flavoursome and varied with spices and zesty flavours put together with a lot of rice. But it was the care and attention to preparing those ingredients that stands out most and it is what has been instilled in me as a chef. I am preparing the food that I’ve always eaten and prepared in Bali – the small plates, spicy salads and traditional dishes – with a modern twist. Let me bring the essence and flavours of Indonesia to you, feel at home and experience the flavours. However, there will obviously be plenty of Rice!”
